Rice base

- Garlic โ 3โ4 cloves (chopped)
- Green Peas โ about 100g (frozen or fresh)
- Bell Peppers ๐ถ๏ธ โ 1โ2 (shredded or diced)
- Tomato ๐ โ 2 (peeled and chopped; or use 200g canned tomatoes)
Seasoning
- Olive Oil โ 3โ4 tablespoons
- Paprika โ 1 teaspoon
- Salt and black pepper โ to taste
- Lemon ๐ โ half (cut into wedges and squeeze the juice before serving)

Step 1: Prepare the soup base
- Soak the saffron in warm water or broth and let it sit for 10 minutes. The color will gradually release.
- Keep the broth hot so that it can be easily heated when adding rice.
Step 2: Sautรฉ the base (Sofrito)
- Heat olive oil in a paella pan (or large shallow pan) over medium heat.
- Sautรฉ chopped onion and garlic.
- Add shredded red bell pepper and chopped tomatoes, stir-fry until the water is dried up and a rich tomato sauce base is formed.
- Add chili powder and stir well.

- Use short-grain rice. ๐ Bomba rice is the most authentic, absorbs soup well and won't rot. If you can't find it in Hong Kong, use Arborio (stew rice) instead.
