🛒 Ingredients preparation

  • 200g squid tentacles (fresh or frozen)

  • 300g green beans

  • 2 cloves of garlic (peeled and sliced)

  • 1 green onion (cut into sections)

  • 1 tablespoon cooking wine

  • 2 teaspoons light soy sauce

  • 1/2 teaspoon sugar

  • Pepper to taste

  • A little chicken powder (optional)

  • 1 teaspoon cornstarch (for marinating squid)

  • 2 tablespoons water

  • Appropriate amount of cooking oil

🥄 Detailed cooking process

1. Material handling

  • Wash and cut beans into sections, and cut bell peppers into strips for later use.

  • Wash the squid and remove the membrane and impurities. If there are any suction cups, gently scrape them away.

  • Marinate the squid with cornstarch, salt, pepper and cooking wine for 10 minutes, then blanch in boiling water (i.e. blanch for 10 seconds and remove), skim off the fishy smell and excess water, drain and set aside.

2️⃣ Pre-fry beans

  • Boil the beans in boiling water with salt until they are 80% cooked, pick them out and rinse them with cold water to keep them green, drain and set aside for later use. This will make them taste more refreshing.

3️⃣ Stir-fry over high heat

  • Heat oil in a hot wok, sauté ginger and garlic slices until fragrant, then add bell peppers and stir-fry.

  • Add the beans and stir-fry for 1 minute, then add light soy sauce, sugar and pepper and mix well.

  • Put the squid tentacles into the wok and stir-fry quickly over high heat, then sprinkle a little cooking wine to enhance the flavor.

4️⃣ Stir-fry and season

  • After all the ingredients are mixed well, taste and adjust the taste by adding a little salt and chicken powder as needed.

  • If it feels too dry, add two tablespoons of water.

  • Add chopped green onion at the end and stir-fry for 5-10 seconds, then turn off the heat and serve.
