Ingredients (Serves 4)

  • 1 1/2 tablespoons olive oil

  • 1 onion, finely diced

  • 2 cloves garlic, minced

  • 1/2 carrot, finely diced (optional)

  • 1 stalk of celery, finely chopped (optional)

  • 500g ground beef/pork (half and half for a more fragrant taste)

  • 125ml dry red wine (if you don’t have wine or don’t like it, you can use beef broth instead)

  • 800g canned tomato puree

  • 2 tablespoons tomato paste

  • 1-2 beef broth blocks (crushed) or an equal amount of beef broth

  • 2 bay leaves

  • 2 sprigs thyme/rosemary or 1/2 teaspoon dried thyme

  • 1-2 teaspoons sugar (to balance the acidity)

  • 2 teaspoons Worcestershire sauce (optional)

  • ¾ teaspoon salt, ½ teaspoon black pepper

  • Spaghetti 400g

  • Parmesan cheese gration, chopped celery (for garnish)

Detailed cooking process
1️⃣ Heat olive oil in a wok over medium heat, sauté onion and garlic. Add carrots and celery and stir-fry until softened and onion becomes translucent, which will give the dish a more layered texture.

2️⃣ Turn to high heat and add the minced meat, stir-fry until the meat changes color completely and has a slightly brown and charred aroma (Editor's tip: there will be no meaty smell when it is fried fragrant).

3️⃣ Add red wine or beef broth and cook for 1-2 minutes to absorb the alcohol smell. Use a spatula to scrape the bottom of the wok to dissolve the fried part and drain the juice.

4️⃣ Add tomato puree, tomato paste, broth cube, bay leaves and thyme, add sugar, Uster sauce, salt and black pepper.

5️⃣ Turn to low heat, cover, and bake for at least 30 minutes (it’s best to slow cook for 1.5-2 hours). Stir gently every 15 minutes to concentrate the essence of the meat sauce. Watch the meat and tomato sauce slowly blend together. The longer you cook, the more flavorful it will be!

6️⃣ If the taste is too sour, add sugar; if the texture is too thick, add water/beef broth.

7️⃣ On the other side, add pasta to boiling water and cook according to package instructions for 1 minute less, reserving 1/2 cup of the pasta cooking water.

8️⃣ Remove the pasta and add it to the meat sauce pot, stir in the pasta cooking water, and stir-fry over medium heat for 1-2 minutes to allow the sauce to perfectly absorb each piece of pasta.

9️⃣ Serve on a plate, sprinkle with Parmesan cheese and chopped celery, and pair with a glass of red wine for a delicious meal!
