Gazpacho 🍅🥒🫑
Gazpacho is a traditional dish from Andalusia in southern Spain. It's a smooth, cold soup made with tomatoes, cucumbers, bell peppers, garlic, olive oil, and vinegar. Not only is it refreshing and healthy, it's also a great choice for vegetarians and those trying to lose weight.
🛒 Ingredients (about 4 servings)
- Ripe tomatoes🍅: 5-6 (about 700g, red is the most beautiful)
- Cucumber🥒: 1 (seeded and peeled, cut into sections)
- Red bell pepper: 1 (deseeded and cut into pieces)
- Onion: half (chopped)
- Garlic🧄: 1-2 cloves (core removed and minced)
- Olive oil🫒: 50ml (cold pressed extra virgin, with fruity aroma)
- Red wine vinegar🍷: 2 tablespoons (or sherry vinegar for a more authentic sour taste)
- White bread🥖: 1 slice (remove the edges and soak in water to increase the consistency)
- Cold water💧: about 100ml (adjust the consistency)
- Salt: appropriate amount
- Crushed black pepper: appropriate amount
- A little basil or parsley (for garnish)
👩🏻🍳 Detailed cooking process
1. Processing tomatoes
- Make a cross cut on the tomato, blanch it in boiling water for 30 seconds, then put it in ice water to easily peel it.
- Cut into pieces and set aside. Removing the seeds is optional. Otherwise, the tomato flavor will be stronger.
2. Prepare other vegetables
- Peel and seed the cucumber, then cut into sections.
- Remove the seeds and tendons from the red bell pepper and cut into small pieces.
- Chop the onion and core the garlic and mince it finely to avoid bitterness.
3. Blend into soup
- Place tomatoes, cucumbers, red bell peppers, onions, garlic, and bread in a blender.
- Add olive oil, red wine vinegar, cold water, salt, and black pepper.
- Blend on high speed for 2-3 minutes, until smooth.
4. Filtering (optional)
- If you want a smoother taste, you can strain the soup and filter out the residue with a fine mesh sieve.
- If you like the taste of the grains, you can drink it directly.
5. Refrigerate
- Refrigerate the soup for at least 2 hours to make the flavors more blended and the drink more refreshing.
6. Finish serving
- Pour the frozen gazpacho into a bowl or glass.
- Sprinkle some cucumber cubes, red pepper cubes, olive oil drops and basil leaves on the surface for decoration.
- A bowl of refreshing summer cold soup is ready~❄️🍅
🌟 Editor's Tips
- Sour choice : Red wine vinegar is the most authentic, but apple cider vinegar can be used instead.
- Thickness : If you want a thicker consistency, add more bread; if you want a lighter consistency, add more cold water.
- Advanced version : You can add a little chili 🌶️ to make the taste more refreshing.
- Health Tip : Gazpacho is almost not fried, low in calories and high in fiber, making it a good choice for weight loss and vegetarians.
- Hong Kong fusion : If you want to cater to the taste of Hong Kong people, you can add a little sugar to make the sour taste milder.
