1. Processing tomatoes

  • Make a cross cut on the tomato, blanch it in boiling water for 30 seconds, then put it in ice water to easily peel it.
  • Cut into pieces and set aside. Removing the seeds is optional. Otherwise, the tomato flavor will be stronger.

2. Prepare other vegetables

  • Peel and seed the cucumber, then cut into sections.
  • Remove the seeds and tendons from the red bell pepper and cut into small pieces.

3. Blend into soup

  • Place tomatoes, cucumbers, red bell peppers, onions, garlic, and bread in a blender.
  • Add olive oil, red wine vinegar, cold water, salt, and black pepper.

4. Filtering (optional)

  • If you want a smoother taste, you can strain the soup and filter out the residue with a fine mesh sieve.
  • If you like the taste of the grains, you can drink it directly.

5. Refrigerate

  • Refrigerate the soup for at least 2 hours to make the flavors more blended and the drink more refreshing.

6. Finish serving

  • Pour the frozen gazpacho into a bowl or glass.
  • Sprinkle some cucumber cubes, red pepper cubes, olive oil drops and basil leaves on the surface for decoration.
