🥬🍄 Luohanzhai - Hong Kong-style classic vegetarian feast
Editor's Preface
Luohanzhai (Luohan Zhai) is a beloved dish for family feasts in Hong Kong, Macau, and Guangdong, as well as for the first and fifteenth day of the lunar month and everyday vegetarian meals. While the idea of 36 vegetables might seem outrageous, it's actually quite versatile and can be easily adapted to fit any leftovers in the fridge. Soy products, mushrooms, and a variety of vegetables combine in one pot, creating a vibrant, healthy, and filling dish perfect with rice or noodles. This editor will share step-by-step instructions for creating a truly exceptional Luohanzhai (Luohan Zhai) using the most affordable ingredients!
Ingredients preparation
-
1/4 head of fresh broccoli/cauliflower florets
-
Broccoli/baby cabbage portion
-
Half a carrot
-
1 bunch vermicelli (soaked and cut into sections)
-
6 dried shiitake mushrooms (soak until softened, retain the water)
-
1 handful of cloud ear mushrooms (soaked)
-
1 handful of daylily (soak until softened and cut into sections)
-
6-8 tofu puffs (cut in half)
-
1 piece of 100-sheet tofu
-
1 small piece of fresh bean curd
-
Corn segments, water chestnuts, asparagus, green beans, sugar beans, bean curd sheets, etc. (any combination)
-
2 slices of ginger, 2 cloves of garlic
-
2 tablespoons corn oil/peanut oil
-
Luohanzhai canned juice (optional)
-
1 tablespoon fermented bean curd (more fragrant, not necessary)
-
1.5 tablespoons light soy sauce
-
1 tablespoon oyster sauce or vegetarian oyster sauce
-
1/2 teaspoon sugar
-
Pepper to taste
-
350-400ml of mushroom water/clear water
Detailed steps
🥢 1. Material preparation
-
Soak the dried mushrooms, cloud ears, daylily, etc. until softened and set aside. Chop all the vegetables into pieces and soak the vermicelli until softened and cut into sections.
-
Cut the tofu and bean curd into large pieces that are suitable for your taste.
-
Pre-cut ginger and minced garlic.
🍳 2. Sauté the base
-
Heat oil in a large soup pot and sauté ginger and minced garlic.
-
If you want fermented bean curd, fry it first (press it with a spoon), it will be more red and fragrant.
-
Add dried shiitake mushrooms, daylily, cloud ear mushrooms, and carrots and stir-fry until fragrant.
🥗 3. Add all kinds of ingredients and stir-fry
-
All the tougher ingredients that need to absorb flavor (such as tofu, bean curd sheets, bean curd sheets, etc.) should be dropped first.
-
Add light soy sauce, oyster sauce (or vegetarian oyster sauce), sugar and pepper and stir-fry briefly.
🍲 4. Add soup and cook until tender and tasty
-
Pour in mushroom water or water, canned juice, covering the ingredients.
-
Cover and simmer over medium heat for 6–10 minutes until vegetables are softened and tofu is tender.
-
Add the remaining vegetables (cabbage, baby cabbage, broccoli, asparagus, etc.) and vermicelli halfway through the cooking process according to your taste to avoid overcooking.
-
If you want to reduce the sauce, you can open the lid and cook over high heat until the sauce is thick enough to cover the ingredients.
🥄 5. Complete on stage
-
Remove from the heat and place on a plate, then sprinkle with green onions and a little pepper.
-
It can be served hot or served plain with rice.
Editor's Tips
-
Tofu, bean curd sheets, daylily and cloud ear mushrooms are essential, as they absorb juice and are nutritious.
-
Remember to add the vermicelli last, otherwise it will be too juicy and dry.
-
If you like spicy food, you can add chili peppers or spicy fermented bean curd to stir-fry.
-
If you don’t have canned Luohanzhai, fermented bean curd + oyster sauce + mushroom water is already very flavorful.
-
Please don’t throw away the mushroom water, it will retain its flavor.
Eating experience 😋
The vegetarian pot is colorful and filled with a variety of vegetables. Every bite will absorb the fresh and fragrant fermented bean curd sauce. The vermicelli and tofu are juicy. It is healthy and filling, and you will feel no burden after eating it!
