🥢 Pad Thai Super Detailed Recipe + Hong Kong Home Cooking Tips

Pad Thai is a signature Thai street food, packed with flavors: salty, sweet, sour, and spicy. Peanuts, bean sprouts, shrimp, and lemon are all added to the mix, making it incredibly delicious! I've shared my perfect recipe, so even the most experienced Hong Kong chef can become a Thai chef!

Ingredients (Serves 2-3)

  • Thai rice noodles (Phnom Penh noodles/Thai rice noodles) 200g

  • 8-10 shrimps (chicken, pork, or tofu are optional)

  • 2 eggs

  • 1 small bunch of chives, chopped

  • Half a bowl of sprouts

  • 2 cloves garlic, minced

  • 2 tablespoons shallot, chopped

  • 1 small piece of fried tofu, diced (optional)

  • 2 tablespoons peanuts (roasted and crushed)

  • 1 lime, cut into wedges

  • Chili powder, coriander, and green onion as needed

Pad Thai Sauce

  • 1.5 tablespoons of Tamarind paste (or light soy sauce and lemon juice)

  • 50g coconut sugar (or brown sugar)

  • 2 tablespoons fish sauce

  • 3 tablespoons water

Production Process

1. Soak the rice noodles in warm water for about 30 minutes, drain and set aside. Rinse the shrimp/meat, cut the chives and bean sprouts into sections, and dice the tofu. Crush the peanuts and slice the lime wedges.
2️⃣ Heat all sauce ingredients until completely melted and mix well.
3️⃣ Heat oil in a wok, sauté garlic and shallots, then add egg and stir-fry.
4️⃣ Add shrimp (or meat/tofu), eggs and other ingredients and stir-fry until half cooked.
5️⃣ Add the rice noodles and Pad Thai sauce and stir-fry until the noodles are evenly absorbed by the sauce. If it feels too dry, add a little water.
6️⃣ Add fried tofu cubes, chives and most of the bean sprouts and stir-fry until the chives are softened (don’t stir-fry them too long to keep the crisp texture).
7️⃣ Before removing from heat, sprinkle some chopped peanuts and mix well.
8️⃣ Serve on a plate. Sprinkle the remaining chopped peanuts, bean sprouts, chopped green onions, coriander and chili powder on the noodles. Add a wedge of lime and mix everything together. The lemon juice will enhance the flavor and make it even more delicious!

  • The essence of Pad Thai is the sauce. If the flavor is not strong enough, try adding sugar, fish sauce, and lemon.

  • Add more sprouts and peanuts to enhance the taste

  • The sauce can be made in advance for quick stir-frying later

  • The wok fire at home is not as strong as that of Thai hawkers, so when frying, put the ingredients in batches to avoid getting them wet.
