🛒 Ingredients preparation

2 slices of Hong Kong-style egg noodles (or alkaline noodles as needed)

1 bunch of chives

Half an onion

1 shallot

150g silver sprouts

2 tablespoons light soy sauce

1 tablespoon dark soy sauce

1 tablespoon oyster sauce

1 teaspoon sugar

a pinch of salt

1 tablespoon white sesame seeds (for garnish)

Appropriate amount of cooking oil
🍲 Detailed stir-fry process
1️⃣ Noodle pretreatment

Boil the dough in boiling water for 1-2 minutes until 80% cooked. Remove from heat and immediately rinse with cold water to prevent it from becoming overcooked.

Use chopsticks to loosen the noodles, sprinkle a little oil and mix well (to avoid them sticking together).
2️⃣ Prepare side dishes

Wash and cut the leeks into sections, cut the onions into shreds, slice the shallots, remove the heads and tails of the silver sprouts, rinse and drain.
3️⃣ Prepare the soy sauce

Mix light soy sauce, dark soy sauce, oyster sauce, sugar and a little salt, stir until the sugar dissolves, and set aside.
4️⃣ Stir-fry the ingredients

Heat oil in a wok, sauté shallots and onions over medium-high heat until slightly charred and fragrant. Add silver sprouts and stir-fry.

When the silver sprouts are slightly softened, remove from the heat and stir-fry the leeks. Remove from the heat and silver sprouts and set aside.
5️⃣ Official fried noodles

Heat oil in a wok, add the cooked noodles and stir-fry over medium heat for about 1-2 minutes until dry and fluffy.

Pour in the sauce little by little and stir-fry while adding. Each noodle should be dyed with soy sauce color, and reserve a little sauce.
6️⃣ Stir-fry to finish

Add the silver sprouts, leeks, and onions back into the noodles and stir-fry over high heat for 3 to 4 times to ensure they are fully heated and fragrant.

Finally, sprinkle with white sesame seeds.
