🛒 Ingredients preparation

  • 8-10 pieces of fish curd (can be purchased ready-made or refer to the homemade recipe below)

  • 1 brick of soft tofu (flat tofu/southern tofu)

  • 2 cloves of garlic, 2 slices of ginger, and appropriate amount of scallions

  • 1 chili pepper (optional, adds a slightly spicy flavor)

  • 1/3 carrot (thinly sliced ​​for color, optional)

  • 1.5 tablespoons oyster sauce

  • 1 tablespoon soy sauce

  • 0.5 tablespoon dark soy sauce (for coloring)

  • 1/2 teaspoon sugar

  • 200ml chicken broth or water

  • 1 teaspoon cornstarch + 2 tablespoons water (for thickening)

  • 200g dace fish meat

  • 1/3 brick of cloth-wrapped tofu

  • 1 egg

  • chopped green onions

🍲 Detailed cooking process

1️⃣ Prepare/make fish curd

  • Ready-made fish curd can be directly blanched in water or lightly fried in oil to make the surface golden and taste more fragrant.

  • To make homemade fish tofu : Mix the fish meat with mashed tofu, eggs, and chopped green onions, season well, refrigerate for 30 minutes, scoop into small pieces with a spoon, and fry until both sides are golden brown.

2️⃣ Processing tofu

  • Cut the tofu into large pieces, dry the surface with kitchen paper, and lightly fry in oil in a frying pan until lightly browned and set (frying is also fine but the texture will be softer).

3️⃣ Sauté ingredients until fragrant

  • Heat oil in a wok and sauté ginger slices, minced garlic, and chili peppers over medium heat. If you like, you can add carrot slices to add color.

4️⃣ Stir-fry or stew

  • Add tofu and fish curd, fry until fragrant, then add chicken broth or water.

  • At the same time, add oyster sauce, light soy sauce, dark soy sauce and sugar and mix well.

  • Turn to low heat and cover and simmer for 5-8 minutes to allow the tofu to absorb the flavor of the dried fish tofu broth.

5️⃣ Add starch to thicken the sauce

  • Open the lid, turn to medium heat, and taste.

  • Slowly pour in the cornstarch water and gently spread it evenly until the sauce is coated on the fish tofu and tofu.

  • Sprinkle with chopped green onions and serve immediately. It is most delicious when it is hot and spicy.
