👨🍳 Ultra-detailed localization production process

1️⃣ Prepare the batter

  • Mix flour, glutinous rice flour, salt, black pepper and garlic powder

  • Add egg and ice water and knead quickly until thick. Let it rest for 10 minutes for a smoother texture.

  • **Editor's Tip:** Use ice water for a crispier look! Seafood broth makes it even sweeter.

2️⃣ Seafood & side dish preparation

  • Cut all seafood into sections, wash them with stream water, and pat dry with kitchen paper.

  • Cut the green onion into 3-inch long pieces or whole strips, cut the chives into sections, and prepare the carrots and onion strips.

  • Stir-fry the shrimp and squid until fragrant and mix them into the batter for a more flavorful taste

3️⃣ Formal assembly (clear layers)

  1. Heat oil in a wok over high heat until sesame oil is slightly smokey.

  2. Place a layer of green onions (lightly press the bottom with green onions to maintain its original shape)

  3. Pour half of the batter on top and top with seafood side dishes

  4. Sprinkle with the remaining radish and onion shreds (for color and fiber)

  5. Pour the second layer of batter and try to seal the material

  6. Flatten the pancake (even thickness)

4️⃣ Golden Crispy Pancakes

  • Fry slowly over medium-low heat for 5-7 minutes. When the bottom is golden and crispy, press the pan with a large flat plate to easily turn it over.

  • Fry the other side for another 3-5 minutes until both sides are crispy

  • Finally, add a little sesame oil and fry for another 30 seconds until a thin layer of charred skin appears! 🤤

5️⃣ Perfect serving

  • Cut into 6-8 pieces, sprinkle with chili rings and green onion shreds for decoration

  • Serve with soy sauce, vinegar and garlic dipping sauce

💡 Editor's local experience + tips

  1. Ice water is a must. I tested it twice and it’s a no-brainer!

  2. If you want it to be extra crispy, reheat it in the air fryer at 170°C for 3 minutes!

  3. The glutinous rice flour/garlic powder part can be omitted for commercially available Korean pancake mix

  4. The contents and ingredients can be added freely, such as fresh squid, oysters, octopus, and crab sticks.

  5. The remaining ingredients can be turned into scallion pancakes. Fry the scallions in sesame oil first, then spread the pancake batter.

🏥 Nutritional Analysis

  • Seafood provides protein and Omega-3

  • Eggs & vegetables high fiber low fat

  • Dipping sauces can be reduced in salt and sugar and can be adjusted by yourself

  • Pancakes are perfect for sharing, just like the warm feeling of a family enjoying pancakes and Makgeolli together on a rainy day in Korea☔🥂

📸 Editor's thoughts

I was afraid the dough wouldn't turn over the first time, so I finally managed to get it right by using two large plates, one to press down and the other to tilt. Hong Kong has a wide temperature range, so using an air fryer makes it super crispy. Experiment with the batter ratio a few times to get it just right. It's so romantic to eat seafood pancakes by the window when it rains!

Welcome everyone to try it and share your beautiful photos and experiences with us✨
